  • Prepare the ingredients

    Fresh chili peppers, remove the stem and chop finely. Peel the garlic and shallots. Then, put the garlic, shallots, and chili into a mortar and pound them.

    Purchase the pork ribs, to clean and eliminate the unpleasant smell, rinse them briefly then rub some salt around the ribs’ surface, let it sit for about 2 minutes and then rinse thoroughly with water.

    Next, place the pork ribs into a pot of boiling water, blanch for about 2 minutes, then remove and rinse with clean water once more and let drain.

    In a bowl, combine 2 tablespoons of honey, 1 tablespoon of sugar, 1 tablespoon of soy sauce, along with the pounded garlic, shallots, and chili, then stir well to mix the ingredients.

  • Prepare the ingredients

    To eliminate the unpleasant smell of the ribs, soak them in a little diluted salt water and rinse thoroughly with clean water, then drain in a colander and cut into bite-sized pieces.
