How to make Inverted Yogurt
-
Heat fresh milk and condensed milk
First, you put the mixture of fresh milk and condensed milk into a pot, heating and stirring evenly on the stove until it simmers lightly, then turn off the heat and let it cool to about 40 – 50 degrees Celsius.
-
Mix starter yogurt into the milk mixture
You should stir the starter yogurt evenly before adding it to the milk mixture; this way, the reverse yogurt will not clump, resulting in a smoother and tastier product. Once the milk in the pot cools to 40 – 50 degrees Celsius, pour the starter yogurt (at room temperature) in and stir well.
-
Preheat the air fryer
Then turn on the air fryer to preheat at 80 degrees for 5 minutes and then turn it off. While waiting for the air fryer to heat up, pour the milk into the jars.
-
Yogurt fermentation
Then arrange the jars of yogurt in the air fryer and let them ferment quietly for 2 hours. After fermenting for 2 hours, turn the air fryer on at 80 degrees Celsius for 1 minute and then turn it off. Keep the yogurt inside and let it ferment for at least 4 hours or overnight!
-
Final Product
The yogurt after fermentation will be quite thick, smooth, and will not spill out even when turned upside down. You can add ingredients such as fruits, jams, etc., to the yogurt to bring a richer flavor.
What is upside-down yogurt?
Upside-down yogurt is a type of yogurt that is smooth, thick, pure white, and does not freeze when placed in the freezer. When turned upside down, it does not spill or shift, providing delight for those enjoying it, especially children.
Tips for successful execution
- You need to sterilize all the yogurt-making tools, especially the jars. If the tools are not clean and are contaminated, the yogurt may not be perfect, possibly becoming slimy, watery, or changing color to green/yellow, with an unpleasant smell and bitter taste.
- You can measure 50ml or one and a half cans of boiling water to rinse the condensed milk can clean, then add it to the mixture. However, you should adjust the amount of water accordingly; adding too much water will make the yogurt too runny.
- If you want the yogurt to have a layer of yellow film after incubation, you should dissolve a piece of cheese in hot water and pour it in.
- During incubation, minimize moving or touching the yogurt jar, as this can affect the thickening process of the yogurt, making it prone to separating or breaking.
- If possible, you should use homemade yogurt starter because it contains natural enzymes, which help the fermentation of upside-down yogurt to be more successful.
