How to choose fresh calamansi
- When buying calamansi, you should choose fruits that are bright green or yellow, juicy with smooth, shiny skin, looking fresh and vibrant.
- In addition, when buying calamansi, you can squeeze the fruit to feel. If the calamansi feels too soft or too hard when squeezed, those fruits may either not be ripe, lack juice, or are overripe and about to spoil!
- You should not choose fruits with wrinkled skin, tiny black spots, or bruises.

Cook the sugar water
Put 500g of brown sugar, 300ml of water, and 30g of salt into a pot. Next, place the pot on the stove, stirring continuously over medium heat for about 3 minutes until the sugar is completely dissolved, then reduce the heat and simmer for another 3 minutes until the sugar water boils.

Cook kumquat sugar water
After the sugar water boils, add the juice of 500g of kumquat, stir well, and continue cooking for about 2 more minutes on medium heat until the kumquat sugar water boils again, then turn off the heat.
Tip: To make the kumquat sugar water look more appealing and last longer, you should use a ladle to skim off all the foam when the kumquat sugar water boils. -
