Cold rice 1 cup Tapioca flour 2 tablespoons Rice flour 2 tablespoons (or crispy frying flour) Minced garlic 1 tablespoon Chili sauce 2 tablespoons Tomato sauce 1 tablespoon Fish sauce 2 tablespoons Common seasoning a little (sugar/ seasoning powder/ monosodium glutamate) Cooking oil 200 ml

  • Making Fried Fish Balls

    Put 1 bowl of leftover rice into a bowl, use your hands to knead vigorously for about 3 minutes until the rice is slightly mashed. Then add 2 tablespoons of tapioca flour and 2 tablespoons of rice flour to the leftover rice.

    Knead further until the rice and flour are mixed together, then add 1 tablespoon of chili sauce. Continue kneading until the rice forms a sticky dough that no longer sticks to the bowl.

    Start rolling the leftover rice into round balls like fried fish balls, doing this until all the leftover rice is used up.

    Tips for making better fried fish balls from leftover rice
    • Fried fish balls will be tastier and crispier if you use crispy frying flour.
    • You can still use rice flour as a substitute if you can’t buy crispy frying flour.
    • To make kneading the rice easier, remember to wear gloves or you can use a pestle to mash it; just ensure the rice is mashed enough to form round balls.
    • To help the fried fish balls have a nicer color, don’t forget to add the chili sauce; you can also add green onions, and if you like it spicy, you can add ground pepper!

  • Fried fish balls

    Place a pan on the stove, add about 200ml of cooking oil and turn on the high heat to let the oil heat up. Once the oil is hot, reduce to medium heat and add the fish balls to fry, turning them regularly until they are golden brown.

    When the fish balls are cooked, remove them to a plate to drain excess oil.

  • Garlic fish sauce

    Take another pan, add 2 tablespoons of cooking oil (reuse the oil from frying the fish balls) into the pan. When the oil is hot, add 1 tablespoon of minced garlic and sauté until fragrant.

    When the garlic turns golden, add 2 tablespoons of sugar, stir well, then add 2 tablespoons of fish sauce, 1 tablespoon of ketchup, and 1 tablespoon of chili sauce.

    Stir quickly until the sauce thickens, then add 1/2 cup of water (rice bowl). Season with 1/2 teaspoon of monosodium glutamate and 1 teaspoon of seasoning powder. At this point, we can adjust the sauce to taste.

    Add all the fish balls and stir well, wait for the sauce to thicken and absorb into the fish balls, then turn off the heat. Serve on a plate and enjoy.
