Prepare lotus seeds

Add the cooked lotus seeds, 50g of rolled oats, and 500ml of water into a blender, let it soak for 3 – 5 minutes to soften the oats, then blend until smooth.
After blending, strain through a sieve to make the mixture smoother. Use a spoon to stir well and press the oat and lotus seed residue in the sieve to get the finest mixture.

Making Coconut Milk
Crack open 1 dry coconut, pour the coconut water into a clean bowl, then separate the coconut meat and peel off the brown fibrous skin.
Next, chop the coconut meat into small pieces and put it in a blender along with the coconut water to blend until smooth. If the coconut water is too little, you can add some plain water, just enough to cover the coconut meat.
After blending the coconut meat until smooth, strain it through a sieve or use a cloth to squeeze the coconut milk into a pot, then bring to a boil to get fragrant and rich coconut milk.

Cooking Lotus Seed Oat Milk
Mix the lotus seed oat mixture and the coconut milk in a pot, add 50g of palm sugar, and stir well. Place the pot on the stove over high heat, stirring continuously to dissolve the palm sugar and prevent the milk from sticking to the bottom of the pot.
When the milk just starts to boil lightly, reduce the heat to low, stir well for the milk to boil vigorously for about 1 minute, then turn off the heat. Let the milk cool down a bit, and you can use it immediately or let it cool completely, then store it in a glass jar and keep it in the refrigerator.
