Ingredients for Stir-fried Char Siu Noodles Serves 4

EFU Noodles 250 gr Char Siu 80 gr Brown Shiitake Mushrooms 10 pieces Fresh Shiitake Mushrooms 10 pieces Carrot 1/2 piece Chives 100 gr Onion 1/2 piece Minced Garlic 1 tablespoon Chili Sauce 1 tablespoon Ketchup 1 tablespoon White Wine 1 tablespoon Soy Sauce 1 tablespoon Oyster Sauce 1 tablespoon MSG 1 tablespoon Cooking Oil 1 tablespoon

How to Choose Fresh Carrots

  • Fresh and delicious carrots will have a deep orange color, bright skin, and a firm texture that feels solid in your hand. The tops of the carrots should still be green, not wilted.
  • Additionally, you should choose long, slender carrots with few eyes on the surface for easier cooking.
  • Avoid buying carrots that have a foul smell, wilted tops, or are bent, as these are old carrots that are difficult to prepare and will taste poor.

Information about Efu noodles and char siu

  • Efu noodles, also known as Y noodles, are a type of flat egg noodle made from wheat flour.
  • The characteristic of Efu noodles is the flat, yellow strands, chewy and slightly spongy, which are fried and dried.
  • Efu noodles are prepared by boiling the noodles in boiling water until they expand and become soft and chewy, then made into soups or stir-fried dishes.

How to prepare Stir-fried char siu noodles

  • Prepare vegetables

    Shiitake mushrooms should be washed clean with diluted salt water and then sliced about 1/3 of a finger length.

    Carrots should have the ends removed, use a peeler to peel, wash clean and then cut into thin strips about the length of a finger.

    Onions should have the roots removed, be peeled, washed clean and sliced thinly.

    Chives should be washed clean and cut into pieces about the length of a finger.

  • Boil the noodles

    Place a pot of water on the stove and bring it to a rolling boil, then add the noodles and boil them for 2 minutes.

    After 2 minutes, use your fingers to pick up a strand of noodle; if it feels soft, turn off the heat and drain the noodles in a colander.

  • Make the sauce

    In a large bowl, add 1 tablespoon of MSG, 1 tablespoon of chili sauce, 1 tablespoon of ketchup, 1 tablespoon of oyster sauce, 1 tablespoon of white wine, 1 tablespoon of water, and 1 tablespoon of soy sauce.

    Use a spoon to stir well to combine all the ingredients.

  • Sauté the mushrooms

    Heat the pan over high heat, then add the thinly sliced shiitake mushrooms and the rinsed reishi mushrooms to sear. You should sear without oil so that the mushrooms retain their natural aroma and do not lose moisture.

    Sear the mushrooms until they are slightly golden on both sides, then turn off the heat and transfer the mushrooms to a plate.

  • Sauté the dish

    Place the pan on the stove over high heat, wait for the pan to heat up, then add 1 tablespoon of cooking oil. Once the oil is hot, add minced garlic and sauté until golden and fragrant, then add the carrots and stir-fry for 2 minutes until the carrots are just cooked.

    When the carrots are translucent and slightly cooked, reduce the heat to medium, then add the char siu meat, onions, mushrooms, chives, and sauce, and stir-fry together for another 2 minutes.

    When all the ingredients are evenly coated with the sauce, add the noodles and stir for 3 – 5 minutes until the sauce coats the noodles evenly and the noodles absorb the seasoning.

    Finally, adjust the seasoning to taste and serve on a plate to enjoy.

    Each strand of stir-fried noodles is glossy, soft, and evenly coated with a beautiful sauce. The vegetables are stir-fried to perfection, fragrant and sweet with the taste of mushrooms, interspersed with the rich flavor and distinctive aroma of char siu meat, making the dish even more appealing and enticing.
