Instant noodles 2 packs Shrimp 10 pieces Pork 200 g Carrot 20 g Onion 20 g Egg 1 piece Water 30 ml Mushroom 20 g Oyster sauce 30 g Pepper 1/2 tablespoon Soy sauce 30 g Bok choy 20 g Cornstarch water 3/2 tablespoons

How to choose good shrimp

  • You should choose live shrimp, with a slightly curved body, firm flesh, still flexible, shiny and smooth skin, the head must be tightly attached to the body, and the legs should be firmly attached and intact.
  • You can try stretching the shrimp under the light, observing the joints; the narrower the joints, the fresher the shrimp!
  • You should not choose shrimp that are slimy, with bodies curled into a circle, wide joints, legs turning black, and when pressing on the shell and moving your hand a few times, it feels like there are grains under your fingers.

How to choose good pork

  • You should choose pork that is bright pink, has no strange smell, and the fat is translucent white; avoid meat that is pale and has a bad smell.
  • You can press the meat with your hand; if you see it bounce back immediately, leaving no indentation, and the piece of meat is dry and not sticky, it indicates that this is good meat.
  • Good pork should have even, firm fibers and should not leak any juices or be slimy.
  • When buying meat, you should ask the seller to cut it along the grain and avoid choosing meat with small white bags interspersed between the fibers, as this may indicate that the meat is infected with cysts, which can negatively affect your health when consumed.

How to Prepare Hong Kong Fried Noodles

  • Prepare the Pork and Shrimp

    Soak the meat in salt water, using your hands to rub all over the piece of meat to remove all blood and dirt, which helps reduce the smell. After washing it clean, use a knife to cut it into thin slices that are easy to eat and place them in a bowl.

    After buying the shrimp, wash them clean, let them drain, gently twist the shrimp’s head 2 – 3 times with your hands, then gently pull the head off; at this point, the intestines will also be removed. Peel the shrimp completely.

    • To eliminate the smell, you can also use lemon or vinegar to rub on the meat to help the pork become cleaner.
    • Wash the meat again with clean water.

    • After washing the shrimp clean, soak them in a bowl of diluted salt water for a few minutes, then remove and let them drain.

    Put a pot of water on the stove and wait for it to boil, then add the noodles to briefly blanch them so that the strands separate, then remove and wait for them to drain. Crack 1 egg into the noodles and mix well.

    Wash the vegetables you bought, peel and slice the carrot, cut the green onions into pieces about 4cm long, slice the mushrooms thinly, and just cut the bok choy in half.

  • Stir-fry the noodles

    Spread a little oil in the pan and wait for it to heat up, then add all the previously egg-coated noodles and fry them briefly over medium heat. When one side of the noodles is slightly golden, use a spatula and chopsticks to flip the noodles.

    Place a pan with oil on the stove, when the oil is hot, add all the pork and stir-fry until the meat is slightly cooked, then add the shrimp and continue to stir-fry.

    Add all the carrots, mushrooms, and onions to stir-fry together, season with 30ml of water, 30g of soy sauce, and 30ml of oyster sauce; at this point, you can add the choy sum.

    Add 1/2 tablespoon of pepper and 3/2 tablespoons of cornstarch water, stir-fry until all the ingredients are evenly cooked, then turn off the heat.

    Tip: When stir-frying, keep the heat high to help the ingredients cook quickly while maintaining their fresh, vibrant colors.
