How to choose fresh and delicious pig tongue
- First, you need to pay attention to the color of the pig tongue. Accordingly, fresh and delicious pig tongue will have a bright red, pinkish, and vibrant color, with the part near the throat having an even white color.
- A pig tongue that has just been slaughtered, still fresh and pure, will have the characteristic aroma of pig tongue, without any strange odors.

How to prepare Pig Tongue Porridge

Prepare ingredients
After purchasing the pig tongue, clean it thoroughly. To eliminate the odor, scrape it clean and rub it with a little lemon juice for about 5 minutes, then rinse with clean water and let it drain.
Peel the carrot, wash it clean, then shred it into short strips about half the length of your finger or dice it.
For the straw mushrooms, scrape off the dirty part of the stems and soak them in diluted saline solution for about 10 minutes, then rinse with clean water. Next, use a knife to cut the mushrooms into bite-sized pieces, then place them in a basket to drain.
Clean the green onions and coriander by removing the roots and wilted leaves, scrape the ginger clean, then wash and let it drain. Chop the green onions and coriander separately, and crush the ginger.
After peeling the garlic, wash it clean, then crush it and chop it finely.

Boil the pig tongue
Place a pot on the stove, add about 1 liter of water, then add the crushed ginger and bring to a boil over high heat.
Once the water is boiling, add the prepared pig tongue and boil for about 10 – 15 minutes, then remove it. Continue to scrape off the white skin attached to the tongue and wash it clean.

You put 1 bowl (rice bowl) of rice into a pan, roast over medium heat for about 5 – 7 minutes until the rice is golden and fragrant, then turn off the heat and transfer the rice to a basin. Wait for the roasted rice to cool, then wash it clean.
Next, use the pan used for roasting rice to stir-fry the mushrooms. You add 1 spoon of cooking oil into the pan; when the oil is hot, add a little chopped green onion to sauté until fragrant.
When the onion is fragrant, you add the straw mushrooms, stir quickly over high heat, and season the pan with 1 teaspoon of seasoning powder, 1 teaspoon of sugar, and 1 teaspoon of monosodium glutamate. Stir-fry for about 5 minutes until the mushrooms are cooked, then turn off the heat.

Cooking Pig Tongue Porridge
First, place a pot on the stove, add 1 tablespoon of cooking oil to the pot, heat it up, then add minced garlic and sauté until fragrant and golden.
Next, add 300g of minced meat, stir quickly over medium heat until the meat is firm, then season with the spice mixture including: 2 teaspoons of seasoning powder, 2 teaspoons of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of salt, and 1 teaspoon of ground pepper, stir well.
Stir the meat for about another 3 minutes, then pour in 3 liters of water, and add the washed roasted rice along with the pig tongue into the pot, cook over medium heat for about 30 minutes until the porridge is cooked.
While cooking the porridge for about 15 minutes, take the pig tongue out, let it cool, and slice it thinly with a knife.
After 30 minutes when the porridge is well-cooked, add the sautéed straw mushrooms and carrots, stir well and season with 2 tablespoons of fish sauce, and continue cooking for about 5 more minutes.
Adjust the seasoning to taste, then add chopped green onions and cilantro, and the porridge is ready to serve.
Tip: During cooking, to prevent the porridge from burning at the bottom of the pot, you should frequently use a ladle to stir it well. -
