How to choose fresh and delicious red dragon fruit
- Good dragon fruit will have a deep red skin that is shiny, with fresh green and soft ears.
- Ripe dragon fruit has a light, natural fragrance, feels firm when held, is slightly soft when pressed, and has elasticity.
- Avoid dragon fruit with rough skin, dry and brittle stems and ears, that feels mushy or too hard, and has a strong fermented smell.
How to make Dragon Fruit Yogurt

Dissolve condensed milk and fresh milk
First, place a pot on the stove with 1.5 liters of water on high heat, until the water boils, then turn off the heat and let it cool to about 70 degrees Celsius (about 30 minutes).
Next, add 1 can of condensed milk, and use a ladle to gently stir in one direction until dissolved, then add the remaining 3 packets of sweetened fresh milk and mix well.

Mix the milk and yogurt starter
Continue to add 4 cups of unsweetened yogurt into the milk mixture and stir gently in one direction for 2-3 minutes, until the mixture is completely blended.
Tip: To avoid difficulty in fermentation, you should leave the yogurt starter at room temperature for 3-4 hours if taken from the refrigerator before adding it to the milk mixture. -
Yogurt Fermentation
Take a small glass jar and fill it with yogurt about 2/3 full, cover it, and place it in a foam box.
At the same time, put another pot on the stove with 1.5 liters of water and boil over high heat for 5 – 7 minutes, until the temperature reaches 70 degrees Celsius, then turn off the heat.
Finally, pour all that water into the foam box, cover it, and proceed to ferment the yogurt for 12 hours.
Tip:- The yogurt fermentation temperature will range from 32 – 48 degrees Celsius, and must not exceed 54 degrees Celsius, otherwise the yogurt culture will die.
- If you do not have a foam box, you can put the yogurt in a rice cooker. Just place the yogurt in the pot, cover it tightly, and there’s no need to plug it in!

Making Dragon Fruit Jam
Wash the red dragon fruit with water, peel it, and then cut it into small dice.
Next, put a new pot on the stove with 300g of the diced dragon fruit and 1/2kg of sugar over low heat, using a chopsticks to stir evenly, then proceed to cook the jam for 20 – 30 minutes, until you see the jam candy-like, then turn off the heat.

When the yogurt is done fermenting, open the lid, add 1 – 2 teaspoons of dragon fruit jam, then close the lid and put it in the refrigerator for 2 – 3 hours and it’s ready to enjoy!
