How to choose fresh, delicious longan with thick flesh

  • Choose longan varieties with thick flesh and small seeds, such as Langdong longan, thin-skinned longan,… to enhance the dish’s flavor.
  • It’s best to buy longan in clusters, with green leaves, fresh stems, and slightly moist. Additionally, select large fruits that are dark yellow and have a pleasant, light fragrance.
  • To ensure you’re choosing good longan, you should taste one before purchasing. When peeling, if the longan has thick, juicy flesh, small seeds, and a sweet flavor reminiscent of rock sugar, then it is definitely fresh longan.

What is chia seed?

  • Chia seeds are the seeds of the Salvia Hispaniola plant, which belongs to the same family as herbs like mint and basil, and they originate from southern Mexico, Guatemala, and Bolivia. These seeds are usually white or black, oval-shaped, and of medium size. When soaked, chia seeds expand and form a jelly-like coating.
  • Unlike chia seeds, basil seeds are the seeds of the Occimum gratissimum plant, which are solid black and as small as sesame seeds. When soaked, these seeds are smoother, separate more easily, and do not stick together when immersed in water.

How to make Lychee Chia Seed Tea

  • Soak the tea and chia seeds

    Put 2 bags of black tea bags and 400ml of boiling water into a cup, then soak the tea for 10 minutes.

    Next, in another cup, add 70ml of water and 1 teaspoon of chia seeds, stir well, and soak for about 15 minutes for the chia seeds to expand evenly.

  • Remove the lychee flesh

    With 20 lychees, wash them clean and peel off the skin, then remove the lychee seeds to get the flesh of the fruit.

  • Simmer the lychee with syrup

    Place a pot on the stove, add the lychee flesh along with 350ml of water and 3 pieces of palm sugar. Cover and cook over medium heat until the sugar dissolves, the mixture boils, and the sugar soaks into the lychee.
