How to Choose Good Thanh Trà

  • Thanh trà comes in two types: sour thanh trà and sweet thanh trà. However, for this drink, you should choose sour thanh trà to achieve the desired sourness from the fruit and sweetness from the sugar.
  • Sour thanh trà has a round shape, thin skin, and turns dark yellow when ripe, making it quite easy to bruise. In contrast, sweet thanh trà has a long shape, thick and hard skin, with a white powder coating on the outside and turns light yellow when ripe.

How to prepare sugar-soaked Thanh Tra

  • Prepare Thanh Tra

    First, clean the stems of the fruit and discard any damaged ones.

    Then, wash the fruit thoroughly and soak it in diluted salt water for 40 – 60 minutes.

    After soaking the Thanh Tra, pour the fruit into a basket and let it drain.

    Tip: You do not need to rinse the Thanh Tra again, as the layer of salt on the outside will enhance the flavor and aroma of the soaked fruit.

  • Marinate Thanh Tra

    Sprinkle a thin layer of sugar at the bottom of the jar, then place a layer of fruit and sprinkle another layer of sugar on top.

    Continue alternating layers like this until the jar is nearly full, then cover the top with a layer of sugar.

    Tip: You can make a cross cut on the top of the fruit to help it absorb the sugar more easily.

  • Soak the longan

    Seal the jar tightly, store it in a cool place, and soak the longan for 10 – 15 days to complete.

    Tip: To prevent the longan from fermenting, after soaking, you should store it in the refrigerator!

    To prepare a glass of longan drink, you just need to scoop a few fruits into the glass, mash them with a little water and ice to complete.

    The longan drink is refreshing, has a sweet and sour taste along with the characteristic aroma from the fruit peel, and is extremely effective for cooling down.
