How to cook Braised Snakehead Fish with Pepper

Prepare the ingredients
To save time on preparation, when buying snakehead fish, you should ask the seller to cut off the head, clean the fish, and scale it.
To eliminate the fishy smell of snakehead fish, rub salt inside and outside the fish, then rinse about 2 – 3 times with clean water and let it drain.
Peel the garlic and finely chop it.

Braised fish
Place a pot on the stove, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add 2 teaspoons of sugar and stir well for about 5 minutes over low heat until the sugar dissolves and turns a beautiful amber color.
Next, add 4 cloves of minced garlic and stir well, then add all 400g of prepared snakehead fish into the pot, and add 3 tablespoons of water to braise on low heat.
Add the seasonings to the pot including 2.5 teaspoons of sugar, 1 teaspoon of ground pepper, 1 teaspoon of monosodium glutamate, and 1 teaspoon of salt.
Pour an additional 150ml of water until it just covers the fish, then braise the fish on low heat for about 15 – 20 minutes until the fish is cooked and the braising liquid thickens, then turn off the heat.
