How to choose fresh and delicious fish

  • To choose fresh fish, you should select those that still have shiny, intact scales, with slightly pink gills.
  • You should choose fish with clear, bright eyes that are slightly bulging, not cloudy or slimy.
  • You should buy fish that feel firm to the touch, with a good bounce, and the mouth of the fish should be tightly closed.

  • Prepare the Ingredients

    Clean the fish, scale it, remove the internal organs, gills, and fins. To eliminate the fishy smell, rub the fish with white wine for about 10 minutes, then rinse it with water.

    Use a knife to make shallow cuts on the fish so that the marinade will penetrate better.

    Slice the lemongrass thinly and chop half of it finely.

  • Marinate and Fry the Fish

    Marinate the fish with the sliced lemongrass and about 1 spoon of salt, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of seasoning powder, then mix well and let it marinate for about 10 minutes.

    Then, place a pan on the stove, add 3 tablespoons of cooking oil and heat it up, then add the fish and fry until both sides are golden brown over medium heat for about 15 minutes.

    Place the fried fish with lemongrass on a plate and it’s ready to enjoy.
