How to prepare Spicy Beef Noodle Soup from Bac Lieu

Prepare the ingredients
Peel the garlic and grind it.
Wash the bird’s eye chili and cayenne pepper, then grind them finely with a machine.
Wash the lemongrass, take 3 stalks to grind finely. The remaining 5 stalks should be smashed to use for making the broth.
Soak the dried shrimp in water for about 5 minutes until they swell, then wash them clean and grind.

Cook the spicy sate
Use a pan on the stove, then gradually add the following ingredients: 2 cups of red oil, 10 bird’s eye chilies ground, about 3 – 5 cayenne peppers ground (depending on your spiciness preference), and 2 cloves of ground garlic. Stir the mixture over low heat for about 15 minutes until it thickens.
Then add 100 grams of ground dried shrimp, 2 tablespoons of sugar, and 3 tablespoons of fish sauce to balance the flavor, then mix well for another 10 minutes to finish.

Prepare and marinate the beef brisket
The beef brisket should be washed thoroughly with water and salt to remove any odor.
After washing, cut the beef brisket into bite-sized pieces and marinate with spices.
For 1 kg of prepared beef brisket, marinate it with 3 stalks of finely chopped lemongrass, 2 tablespoons of cooked sate, mix well, and let it sit for 1 hour for the meat to absorb the flavors.

Cooking the broth
First, place a pot on the stove, add the beef brisket and stir-fry until the meat is firm.
Next, add 1 liter of coconut water and 1 liter of filtered water. Then add ingredients such as 1 onion, 5 crushed stalks of lemongrass, 5 tablespoons of seasoning, 2 tablespoons of rock sugar (or white sugar), and 1 tablespoon of monosodium glutamate.
Simmer the broth with the beef and ingredients for 2 to 3 hours on low heat until the beef is tender.
Finally, add 3 tablespoons of previously cooked sate, 2 tablespoons of fish sauce, and half a cup of tapioca flour to slightly thicken the broth.
Tip: Adding 2 tablespoons of pureed gac fruit while cooking the broth will enhance the color, and the final bowl of noodles will have a beautiful deep red color that looks appetizing and delicious. -
Completion
You blanch the noodles in boiling water, drain them, and transfer them to a bowl.
Add the beef brisket, chopped green onions, a little thinly sliced onion, and then ladle over the broth.
