How to choose fresh and delicious beef tendon
- Fresh beef tendon is pinkish-white, with a strong characteristic smell.
- Avoid choosing beef tendon that is dry, has yellow fluid leaking, or has an unusual odor as this indicates the tendon is decomposing.
- Do not choose beef tendon that has a bad smell or no smell because a bad smell means it is old and not fresh, while no smell indicates it has been treated with chemicals.

How to prepare Beef Tendon Noodle Soup

Prepare the beef tendon
After purchasing the beef tendon, rub it with lemon and salt to clean it, then rinse it thoroughly with water several times and let it drain.
How to prepare beef without a bad smell- Method 1: Use a little salt to rub the beef tendon for about 5 minutes, then rinse with water.
- Method 2: Use a little white alcohol to rub the beef tendon for about 5 minutes, then rinse with water and let it drain.
- Method 3: Use a piece of roasted ginger, then peel it and crush the ginger. After that, rub it directly on the beef tendon to make it smell better and taste good.

Marinate the beef
Put the beef tendon in a bowl and marinate it with 1 tablespoon of annatto oil, half of the minced shallots, garlic, half a teaspoon of pepper, 1 teaspoon of seasoning powder, half a teaspoon of chili powder, and 3 crushed lemongrass stalks, then mix well and marinate for 15 – 20 minutes for the flavors to penetrate.

Sautéing and simmering beef
Place a pressure cooker on the stove, add 1 tablespoon of cooking oil. Wait for the oil to heat up, then add shallots and sauté until fragrant. Next, add the beef shank and stir-fry evenly until the meat tightens. After that, add enough water to cover the beef and simmer over medium heat for about 30 minutes.
Tip: Sautéing the beef first will help it become juicy, tighten up, and absorb the seasonings better. -
Completing the broth
Pineapple, peel off the skin, rinse briefly with water, then slice into bite-sized pieces.
Add all the previously simmered beef shank into another pot and place it on the stove. Next, add the pineapple along with 1 tablespoon of fermented shrimp paste, 1 tablespoon of fish sauce, 1 teaspoon of rock sugar, and 1/2 teaspoon of monosodium glutamate, then cook for about 15 minutes until the pineapple is soft.

Completion
Green onions are washed clean, drained, keeping the green tops and finely chopping the green parts.
Season to taste. Finally, add the chopped green onions and the green tops to the pot and turn off the heat.
Serve the noodles in a bowl and pour the broth over them to enjoy.
