How to choose good passion fruit
- Color: Dark purple-red, shiny passion fruit is ripe and delicious, having been exposed to sunlight more, making it sweeter than lighter-colored ones.
- Aroma: Ripe passion fruit has a characteristic faint aroma, the stronger the smell, the tastier the passion fruit. Do not choose fruits with sour or foul smells, as these are spoiled and inedible.
- Weight: When you hold the passion fruit, if it feels heavy and firm, it has more pulp. However, freshly picked passion fruits will be heavier, while older ones may have wrinkled skins and feel lighter due to moisture loss, but the quality of the pulp inside is not affected.
- Size: Depending on the variety of passion fruit, the size will vary. Small passion fruits have less pulp but are sweeter than large ones with more pulp.

How to Make Passion Fruit Cookies

Whip the butter
Add 75g of unsalted butter and 60g of powdered sugar into a bowl, and use the egg beater to mix well.
Next, crack in 1 chicken egg and beat for about 30 seconds until well combined, then add another egg and continue to whip until fluffy.

Add 120g of flour to the bowl with the egg mixture and mix well, then use the egg beater to mix a little more. Stop and add the pulp of 1 passion fruit into the bowl, then continue to mix until the dough is smooth.

Prepare a baking tray lined with non-stick parchment paper.
Scoop the dough mixture into a piping bag, squeeze the dough onto the baking tray into long strips about 10cm long.

Preheat the oven to 190 degrees Celsius for 10 minutes to stabilize the temperature.
Place the tray of cookies in the oven at 180 degrees Celsius for 15 minutes until cooked.

How to store crispy cakes longer
- After baking, wait for the cake to cool completely, then place it in a food-grade plastic bag and seal it tightly, or put the cake in a box with a tight lid. Do not store the cake while it is still warm, as moisture may form and spoil the cake quickly.
- Use leftover moisture-absorbing packets from food usage to put in with the cake to help keep it crispy longer.
- Since homemade cakes do not contain preservatives, they can spoil easily at room temperature; it is best to store the cake in the refrigerator.
- If the cake becomes soggy, before using, put the cake in the microwave at medium heat for about 5-10 minutes to make it crispy again.
