Ingredients for Keto Chocolate Almond Cookies For 3 people

Almond flour 100 grams Almonds 100 grams (or any nuts/walnuts as desired) Honey 120 grams Cocoa powder 160 grams Unsalted butter 55 grams (can be replaced with Tuong An butter) Eggs 2 pieces Baking powder 1 teaspoon

How to make Keto Chocolate Almond Cookies

  • Mixing the dough

    First, sift 100g of almond flour, 160g of cocoa powder, and 1 teaspoon of baking powder into a large bowl. If you only have almonds, you can grind them finely to make flour as usual.

    Next, add 120g of honey and 2 eggs into the bowl and use a whisk to mix the mixture evenly. At this point, the dough is quite dry and crumbly.

    Then, chop the nuts finely and add them to the bowl, and also add 55g of melted butter (double boiler method) into the bowl. After that, use a whisk to mix the mixture into a smooth, sticky dough.

    Tip:

    • You can adjust the amount of honey or replace honey with a sugar substitute. Additionally, you can also add chocolate chips to enhance the flavor of the cookies.
    • If you have a mixer, use it to save time and help the dough mix more evenly.

  • Shaping the cookies

    After mixing the dough, continue to shape the dough into round balls like small balls and place them on a baking tray lined with parchment paper.

    Then, use your hand to flatten the cookies and decorate the top with different types of nuts.

    Tip: You can also shape the cookies into various shapes according to individual preferences. However, do not make the cookies too thick as it will take longer to bake, making them difficult to cook and soft.

    Preheat the oven to 180 degrees Celsius for 7 – 10 minutes. Preheating the oven will help maintain a more stable baking temperature.

    After preheating the oven, place the cookies in the middle rack and bake at 180 degrees Celsius for 15 minutes.

    Note: Depending on the type of oven, there may be different temperature variations, so during the baking process, you need to regularly check the cookies to avoid burning them.
