How to choose good shrimp
- Shrimp should not be too large, with intact shells, and the head firmly attached to the body.
- The legs of the shrimp should be transparent, firmly attached to the body, and the tail section should be neatly arranged.

Preparing squid and shrimp
Squid bought should have its internal organs, bone, and beak removed, soaked in diluted saltwater for 5 minutes, then rinsed several times with water, drained, and cut into bite-sized pieces.
Shrimp should have the head, shell, and the digestive tract removed, washed clean, and drained.
How to properly clean and devein shrimp
- Step 1: Use your hands to pull the head away from the shrimp body.
- Step 2: Peel the shell from the legs of the shrimp upwards. When you reach the tail, hold the tail and pull the shell off.
- Step 3: Use a knife to make a light cut along the back of the shrimp to expose the vein. Carefully grasp the vein and gently pull it out.

Preparation of vegetables and mushrooms
Peel the carrots, wash them clean, and cut them into bite-sized pieces. Wash the tomatoes and cut them into wedges.
Peel the shallots and garlic, then chop them finely. Peel the onion, wash it clean, and slice it thinly.
Trim away any spoiled parts of the bok choy, wash it clean. Cut it into separate sections for the stems and leaves. Wash the celery and cut it into bite-sized pieces.
Soak the shiitake mushrooms in salt water for 10 minutes, cut off the stems, then rinse with water, let it drain, and cut in half.
Proper way to prepare shiitake mushrooms:- Method 1 (boiling mushrooms): Use a knife to cut off any dirty stems (if any), then boil the mushrooms in a pot of boiling water for about 3 minutes, then remove and let drain.
- Method 2 (soaking mushrooms): You can soak the shiitake mushrooms in warm water for about 1 – 2 minutes to clean them of dirt and sawdust. Then rinse with cold water and cut off the stems to help the mushrooms be free of impurities. You can also wash the shiitake mushrooms with rice water to eliminate the raw smell and help the mushrooms retain their natural flavor.
- Method 3 (washing mushrooms): After cutting off the dirty part at the base, soak them in diluted salt water for 2 minutes, then wash thoroughly with water.

Blanch the noodles
Place the noodles in a bowl, pour boiling water to blanch for 3 minutes until the noodles are loose, then remove and drain.

Make the sauce
To make the sauce, add 3 tablespoons of soy sauce, 2 tablespoons of oyster sauce, and 1 tablespoon of sesame oil into a bowl and mix well.
To make the tapioca starch mixture, add 1 tablespoon of tapioca starch and 2 tablespoons of water into a bowl, stir well until the starch is completely dissolved.
Tip: Prepare the sauce in advance so that when you finish stir-frying, you can drizzle the sauce over the noodles to prevent them from drying out. -
Stir-fry seafood and ingredients
Heat a pan on the stove, add 1 tablespoon of cooking oil. When the oil is hot, add the minced shallots and garlic and sauté over low heat until fragrant.
Next, add the squid and shrimp and stir-fry over high heat. When the squid and shrimp are firm, add the carrots and 2 tablespoons of water, stir well for 2 minutes.
Then add the shiitake mushrooms and stir for an additional 2 minutes before adding the onions and bok choy stems.
After that, add the bok choy leaves and stir until the vegetables are just cooked, then add the tomatoes and stir briefly.
Finally, add the sauce and stir, then slowly drizzle in the prepared tapioca starch mixture and stir until the mixture is clear and thickened.
Adjust the seasoning to taste, then turn off the heat and add the celery and 1/2 teaspoon of pepper.
Tip: Add the tougher and longer-cooking ingredients first for even cooking. -
Frying noodles
Heat a pan on the stove with 50ml of cooking oil. When the oil is hot, add the noodles and fry until golden, then remove them to drain the oil.
Place the stir-fried seafood and vegetables on top of the fried noodles to complete the dish.
