Prepare the ingredients
For the squid, pull the head away from the body, then remove the ink sac, skin, eyes, and internal organs. To eliminate the fishy smell, rub the squid with a little salt and minced ginger, then rinse thoroughly with clean water and drain.
Use a knife to cut along the length of the squid to create a large piece, then score the inside with a dragon scale pattern or flower shape, and cut the squid into bite-sized pieces.
Wash the asparagus with a mixture of diluted salt water, remove the tough ends, then cut into pieces about 4 – 5 cm long, and rinse again with clean water.

Blanch the asparagus and squid
You cook a pot of water over medium heat. When the water boils, add 1 tablespoon of vinegar and then drop the cut squid in to blanch for about 2 – 3 minutes, then take it out and let it drain.
Tip: Adding vinegar to the water when blanching squid will help keep the squid white, prevent it from releasing water when stir-frying, and eliminate the fishy smell.Next, place a pot of water on the stove and heat it over medium heat. When the water boils, blanch the asparagus for about 30 seconds, then remove it and immediately soak it in a bowl of ice water, then take it out to drain.
Tip: To maintain the crispness and sweetness of the asparagus, place the asparagus in the ice water bowl right after blanching and soak for about 5 – 10 minutes.

Stir-fried asparagus with squid
Place a pan on the stove, add 4 tablespoons of cooking oil and heat it up. Next, add minced garlic to the pan and sauté for about 5 minutes until fragrant.
Once the garlic turns golden, add the prepared squid and stir-fry for about 5 minutes before quickly adding the asparagus.
