Melting Palm Sugar
You crush the palm sugar into small pieces, then add it to a pot with 10gr of water and place it on the stove over medium heat until the sugar completely dissolves. When the syrup begins to boil and is slightly darker than before, add 185gr of coconut milk to the pot, stirring well to combine the mixture.
When the mixture comes back to a gentle boil, turn off the heat, pour the mixture into a large bowl, and let it cool until it reaches a temperature of about 30 – 40 degrees Celsius.
Tip:- While melting the palm sugar, remember to stir frequently to prevent the sugar from burning.
- If you are using liquid palm sugar, it also needs to be heated.

Mixing the batter
You sift 90g of tapioca flour and 6g of rice flour into the mixture of palm sugar and coconut milk, then use a whisk to mix well until the batter forms a smooth consistency. When you lift the whisk, the batter should flow in a steady stream without breaking.
Tip: If you use palm sugar syrup or freshly squeezed coconut milk, the batter mixture may be a bit thin. At this point, you can add more tapioca flour to the recipe.You crack 2 eggs into a bowl, use a fork to beat them well, then gradually add the eggs to the batter mixture, along with 5g of cooking oil and 3g of vanilla extract, and continue to mix well with the whisk.
Next, cover the bowl of batter with plastic wrap and let it rest for 20 minutes.

Preheat the baking tray
You place the cake mold in the air fryer, set the temperature to 160 degrees Celsius to preheat the mold for 10 minutes.
After 10 minutes, you take the mold out and spread a little unsalted butter on it. Next, you return the baking mold to the air fryer to heat at 160 degrees Celsius for another 5 minutes.
Tip:- This recipe uses an oval mold measuring 22 x 11 x 5.5 cm.

You set the temperature and baking time for the first round to 150 degrees Celsius for 30 minutes, then lower the temperature to 130 degrees Celsius and continue baking for another 20 minutes. After baking for 50 minutes, you still let the cake stay in the air fryer for another 5 – 10 minutes before taking it out.
Tip:- If you are using a regular air fryer, reduce the temperature by another 10 degrees Celsius. Thus, you will bake the cake at 140 degrees Celsius for 30 minutes and 120 degrees Celsius for 20 minutes.
- At the same time, use aluminum foil to cover the cake mold during the first 30 minutes of baking to prevent the cake from rising too high.
