  • You should choose roots that are slender, moderate in size, still have the leaf stem, and feel firm, not too soft. Avoid choosing roots that are bruised, have cracks that are not intact, or are missing a corner.
  • Choose roots with an intact outer skin, smooth, not rough, and without black spots.
  • Select roots that have a uniform orange color; do not choose those that are too dark as they may have been sprayed with chemicals.

How to select and store fresh peas

  • To choose fresh peas, look for those with shiny pods, and when you break the stem, it should always feel crisp. Avoid peas with rough pods as those may not have good seeds or could be shriveled.

  • Prepare the shrimp

    Wash the shrimp with diluted saltwater or white wine to eliminate the fishy smell, then cut off the head.

    Next, peel the shell and use a knife to make a lengthwise cut along the back or use a toothpick to remove the black vein on the back of the shrimp. Finally, rinse the shrimp once more to clean, drain, and chop into small pieces.

    Peel the carrot, wash it clean, and dice it. Wash the peas and separate the seeds.

    For the corn, remove the outer leaves, then use a knife to separate the corn kernels.

    Note

    • You can buy pre-cooked corn from outside or buy corn to cook or steam yourself!
    • If you buy corn to boil yourself, you should choose ears with plump, even, shiny, and straight kernels. Avoid choosing overly large corn; opt for medium-sized, slender ears.
    • You can replace sweet corn with glutinous corn; however, glutinous corn will not be as sweet and the kernels will become mushy after boiling, making it harder to separate for cooking like sweet corn.

    Put a pot on the stove, add 500ml of chicken broth, bring to a boil, then add carrots, peas, and corn to cook for 15 minutes until soft.

    When the vegetables start to soften, add the shrimp and season with: 1/4 tablespoon of salt and 1 tablespoon of seasoning powder.

    Take a bowl, add 30gr of cornstarch and 50ml of water, stir well to combine the mixture.
