- Shape: You should choose medium-sized stalks, not too small as they will have less flesh.
- Aloe vera skin: Choose stalks that are intact, not cracked or bruised; when pressed lightly, the skin should be crispy and elastic. Do not select stalks that are soft, not elastic, or have liquid leaking out as they are spoiled.

Prepare the ingredients
Pasta bought should be soaked in cold water for about 30 minutes and then drained.
Peel and finely chop the carrot.
Chop the coriander. The white part of the green onion should be finely chopped, and the green part cut into small pieces.
Peel the aloe vera, soak it in lemon juice for about 15 minutes, and then cut it into small pieces.
Remove the shrimp heads, peel the shells, and use a small knife to make a shallow cut along the back to remove the shrimp intestine. Gently squeeze the shrimp body to make the intestine protrude slightly and pull it out with your hand.

Marinate the shrimp
After cleaning the shrimp, crush and roughly chop them. Marinate the shrimp with the chopped green onion tops and 1/2 tablespoon of seasoning powder. Mix well and let the shrimp absorb the seasoning for about 30 minutes.

Stir-fry shrimp
Place a pot on the stove, add cooking oil. When the oil is hot, add the marinated shrimp and stir-fry until the shrimp is firm and changes color. Remove the shrimp to a bowl.

Cook the soup
Add 1 liter of chicken broth to the pot, then add the stir-fried noodles and carrots, cook until the broth boils and the noodles are soft.
After the noodles and carrots are soft, add all the aloe vera to the pot and stir well. Season the pot with 1 tablespoon of seasoning, continue to cook until the broth boils again.
When the ingredients are cooked, dissolve 1.5 tablespoons of tapioca starch in water, then slowly pour the tapioca starch into the pot, stirring until the soup reaches the desired thickness.
