Prepare the Duck Meat
First, to eliminate the fishy smell of duck meat, after purchasing, wash it thoroughly and cut it into bite-sized pieces. Next, mince 1 piece of ginger and marinate it with the meat for about 20 minutes. After marinating, wash the duck meat again with water.
How to Clean Duck Meat, Odor-Free:
– Method 1: Use a Mixture of Alcohol
- Use coarse salt to rub all over the duck, then wash it again with water to make it cleaner.
- At this point, use a mixture of alcohol and sliced ginger, crush it and rub it all over the duck once more to ensure the duck is completely clean and odor-free. Rinse with water and let it dry.

Prepare Other Ingredients

Next, soak the mushrooms in warm water for 30 minutes until they are soft, then wash them thoroughly.
Wash the onion and green onion, wait for the green onion to dry slightly, then cut into pieces about the length of your finger. For the onion, cut it into small wedge-shaped pieces. Peel and mince the garlic.

Marinate duck meat
Add minced garlic to the duck meat along with 1 teaspoon of salt, 2 teaspoons of seasoning powder, 1 teaspoon of broth powder, 1 teaspoon of pepper, and 2 teaspoons of sugar.
Next, add the salted lemon that has been marinated with sugar, mix well, and let the duck marinate for 10 – 15 minutes to absorb the spices.

Stew duck meat
Place a pan on the stove and add 2 tablespoons of cooking oil to the pan.
Wait for the oil to heat up, then add the marinated duck meat and stir-fry for 5 – 7 minutes until the meat is firm, then turn off the heat and transfer the meat to a clay pot for cooking.
Add 500ml of coconut water to the pot with the meat. Also, add 100g of shiitake mushrooms, chopped green onions, onion, and the remaining salted lemon. Cover and cook on low heat for 15 minutes.
