What is coconut snail? How to choose delicious coconut snails

  • Coconut snail is a fairly popular freshwater snail among the people of the Mekong Delta.
  • Coconut snails have a hard, smooth shell with brown or dark brown stripes. Coconut snails are uniformly large, with chewy and sweet meat.
  • It is advisable to choose live snails to ensure the quality of the dish; you can touch the snail’s mouth with your hand, and live, fresh snails will retract their shells and close their mouths immediately. Snails that emit a foul odor, have deeply retracted shells, and ooze slime are dead or have been long dead, and should not be purchased.
  • To test if a snail is dead, drop it into a basin of water; if the snail’s bottom floats up and feels light, it is dead and should be discarded to avoid affecting the other live snails.
  • Look at the snail’s shell; snails with shells that are close to the outer edge are plump, fat, and delicious. Thin snails have shells that are retracted inward.

How to Prepare Stir-Fried Coconut Snails with Butter

  • Prepare the Coconut Snails

    To quickly purge the dirt from coconut snails, after purchasing, wash them thoroughly and soak them in rice water for 1 – 2 hours.

    If you don’t have rice water, you can soak the snails in saltwater for about 3 hours and change the water about 3 to 4 times during the soaking period.

    After the snails have purged the sand, take them out, rinse thoroughly with water, and let them drain.

    How to Prepare Coconut Snails to Purge Sand Completely

    • You should soak the snails in a metal basin because snails will purge all the dirt when they come into contact with metal. If you don’t have a metal basin, you can place a few metal utensils like knives or forks into the basin and continue soaking the snails for about 1 – 2 hours.
    • Soak the snails in rice water so they can purge the dirt quickly. If you don’t have time to prepare rice water, you can soak them in cold water and add about 3 – 4 chili peppers for about 1 – 2 hours.
    • You can also soak the snails in a mixture of lemon, vinegar, and chili. Just mix the ingredients together and soak the snails, and they will quickly purge the dirt for cooking.

  • Sauté Coconut Snails

    Place a pan on the stove, add 3 tablespoons of unsalted butter and melt it. Next, add minced garlic and chili to sauté until fragrant.

    When the garlic and chili are aromatic, add 1 teaspoon of fish sauce, 1 teaspoon of sugar, and 1/3 teaspoon of monosodium glutamate to the pan and stir well until the seasonings are dissolved.

    Next, add the prepared coconut snails to the pan, then add another teaspoon of sugar. Turn the heat to medium and sauté the snails until they are opened and cooked evenly.

    Finally, add 1/2 teaspoon of fish sauce to the pan and stir for about 2 more minutes for the snails to absorb the seasoning, then turn off the heat.

    Plate the snails, garnish them nicely, and you are done.
