How to prepare Steamed Razor Clams with Lemongrass

  • Prepare the ingredients

    First, wash the razor clams thoroughly and then use a knife to make a longitudinal cut in the middle to remove the internal organs. After that, wash the clams again.

    Remove the top part of the lemongrass, keeping the stalk and root. Next, wash it thoroughly and cut it lengthwise into 4 equal parts. For ginger, peel it, wash it clean, and then cut it into thin strips.

    Place a layer of lemongrass in the steamer, then arrange the cleaned clams on top. Next, cover the clams with the remaining lemongrass and ginger.

    Then, place this clam steamer over a pot of boiling water, cover it tightly, and steam over medium heat for 8 – 10 minutes until cooked.

  • Making dipping sauce for clams

    Put 2 cloves of garlic, 1 chili, and a small piece of ginger into a blender and blend until smooth.

    Next, pour the blended mixture into a bowl, then add 1 teaspoon of monosodium glutamate, 2 teaspoons of sugar, 1 tablespoon of fish sauce, the juice of 1/2 lemon, and a little chopped dill. Mix the ingredients well to finish.

How to Make Beer Steamed Razor Clams

  • Prepare the Razor Clams

    Soak the clams in rice water or diluted salt water with 2 sliced chilies for about 1 – 2 hours.

    Then, use sharp scissors to cut the body of the clam to expose the inner part, rinsing off the dirt. Rinse again with water and let drain.

    Cut the lemongrass in half with a knife and use a pestle to crush it.

    Next, cut the top off the calamondin, then take a plate or bowl, add 2 tablespoons of salt and pepper, and squeeze the cut calamondin into it to have a delicious calamondin salt and pepper dish to enjoy with the steamed razor clams.

    Put half of the crushed lemongrass at the bottom of the pot, then add the prepared razor clams, pour 330ml of fresh beer into the pot and add the remaining half of the crushed lemongrass.

    Cover the pot, turn on the heat, and steam for about 7 minutes until the clams are cooked. After the clams are done, turn off the heat and use a slotted spoon to remove the clams from the pot.
