  • Prepare the Ingredients

    Buy pork belly, scrape off the outer hair, soak it in diluted salt water for about 10 minutes, then rinse it with water and let it drain.

    Wash the ginger and slice it thinly, wash the lemongrass, cut it into short pieces about 3 finger lengths, then separate it into thin strands.

  • Boil the Pork Belly

    Place a pot of water on the induction stove and add the pork belly, ginger, and lemongrass. Boil for about 10 minutes until the meat is tender, then turn off the heat and let the meat sit in the pot for about 5 minutes.

    Next, remove the meat and place it in a bowl of cold ice water to clean, then put it in the refrigerator refrigerator for about 10 – 15 minutes, then take the meat out and slice it into thin pieces for eating.

  • Prepare and marinate the pork belly

    Soak the pork belly in diluted salt water for about 10 minutes, then rinse it clean with water and let it dry.

    Marinate the pork with: 1/2 spoon of monosodium glutamate, 1 tablespoon of salt, 1/4 tablespoon of ground pepper, 1/2 tablespoon of five-spice powder, 3 tablespoons of sugar, 1/2 tablespoon of chili powder, 1.5 tablespoons of minced garlic, 3 tablespoons of minced lemongrass, mix well and marinate for about 30 minutes to let the meat absorb the spices.

    Place a non-stick pan on the induction stove with 100ml of cooking oil, once the oil is hot, add the marinated pork and fry over medium heat until the pork is evenly golden on all sides, then remove it from the pan.
