Rice flour 400 gr Fermented sticky rice 180 gr Warm water 200 ml Coconut milk 350 ml Sugar 250 gr Salt 1/4 teaspoon Vanilla 2 gr (2 tubes)

How to process Steamed Rice Cakes from Fermented Sticky Rice

Mix the dough
Put 400gr of rice flour, 180gr of fermented sticky rice, and 200ml of warm water into a bowl, and use your hands to knead until the dough forms a smooth, elastic mass.
Then, tightly wrap the dough with plastic wrap, and let it rest in the refrigerator for 8 hours.

Cook the coconut milk
Place a pot on the stove, add 350ml of coconut milk, 250gr of sugar, and 1/4 teaspoon of salt. Stir well over low heat until the mixture boils, then turn off the heat and let it cool.

Mix the batter with coconut milk
Add 2gr of vanilla to the batter along with the cooled coconut milk. Use your hands to stir until the batter is smooth, then strain it through a sieve.
Cover the batter tightly and let it rest for 2 hours.
Tip: If you want the cake to have a green color, divide the batter in half and mix one part with 60ml of pandan leaf extract. -
Steam the cake
Stir the batter well, pour it into a preheated mold, then steam the cake over high heat for 8 minutes.
