How to make Mini Sponge Cake with 3 flavors using an air fryer

Beat the egg yolks and whites
Use 2 chicken eggs to separate the yolks and whites into 2 different bowls.
For the egg whites, use a whisk to beat continuously until the egg whites form large bubbles. Then add 1 tablespoon of lemon juice and continue whisking for 1 minute.
Next, add 1 tablespoon of sugar. Continue to beat the egg whites and sugar for about 10 – 15 minutes, then add the remaining sugar. Keep beating until the whisk can be lifted and the egg whites form stiff peaks.
Gently mix the egg yolks. Strain the egg yolks through a sieve so the cake mixture will be smoother.
Next, sift 30g of flour and 1/2 teaspoon of salt into the bowl of egg yolks, stirring until the yolks and flour are well blended into a smooth mixture.

Baking the cake
Scoop 1/3 of the whipped egg whites into the egg yolk bowl, gently stir from the bottom up to combine the two mixtures.
Next, add this mixed mixture into the bowl of egg whites. Stir thoroughly and gently to create a smooth, thick mixture. At this stage, be careful not to stir vigorously to avoid breaking the air bubbles.
Divide the cake mixture into 3 bowls, each containing an equal portion. In the first bowl, add 1/2 a tube of vanilla, in the next bowl add 1 teaspoon of Milo powder, and in the last bowl add 1 teaspoon of green tea powder. Use a whisk to gently mix these 3 mixtures.

Baking the cake
Prepare the cake molds, brush a little oil inside the molds. If you have parchment paper or cupcake molds to line, then you don’t need to brush oil.
Gradually pour the batter into each cake mold, and decorate with a few raisins (or nuts, dried fruit depending on preference) on top.
Note: Only fill the batter about 1/2 full in the mold to allow the cake space to rise while baking!Preheat the air fryer for 10 minutes at 150 degrees Celsius. Then, place the cake molds in the fryer one by one and bake the cake at 130 degrees Celsius for 15 minutes.
After the baking time is up, check the cake for doneness by inserting a toothpick into the cake; if it comes out clean with no batter sticking to it, the cake is done.
