How to make Mooncake with mixed filling using an air fryer

Mixing the cake dough
First, put 100g of cake syrup, 1 egg yolk, 20g of cooking oil, and 5g of peanut butter into a bowl. Mix well until the ingredients are thick and homogeneous.
Next, sift 150g of flour into the bowl. Then mix well so that the flour absorbs the liquid mixture. Use your hands to mix thoroughly, then cover the bowl with plastic wrap. Let the dough rest for about 30 minutes to soften.
Tip: If after kneading, the dough is dry and breaks easily, you should add oil or syrup to make the dough moister. -
Make the filling
Combine all ingredients including 30g of roasted cashews, 30g of roasted white sesame seeds, 30g of roasted pumpkin seeds, 30g of steamed sausage, 30g of pumpkin jam, 30g of lotus seed jam, 5g of lard, a small amount of finely chopped lime leaves, and 5ml of Mai Que Lo wine.
Mix the filling well and then add about 2 tablespoons of glutinous rice flour to bind the mixture together.
Tip:- To make the ingredients stick together more easily, you can put them in a blender and blend the ingredients for 30 seconds until the filling is slightly broken but not too smooth.
- If the filling is still difficult to stick together when you grab it, you can add spoonfuls of syrup or a little glutinous rice flour until the filling can be formed without falling apart.

Shaping the Cake
Cut and divide the cake dough and filling in a ratio of 2 parts crust : 3 parts filling. Roll the filling and cake dough into balls.
Next, use a rolling pin to roll the dough into a moderately round shape. Place the filling in the center and then use your hands to gather the edges of the dough together. Roll the dough to make the cake round and even.
Then, use a brush to apply a thin layer of oil to the cake mold, dust a layer of flour inside the mold and the cake tray. After that, place the ball of dough into the mold.
Hold the mold firmly with your left hand, press down hard on the spring with your right hand, and then gently lift the cake out of the mold. Do the same with the other balls of cake dough.
How to divide the cake ratio:- 50g mold: Divide in a ratio of 20g crust : 30g filling.
- 75g mold: Divide in a ratio of 30g crust : 45g filling.
- 125g mold: Divide in a ratio of 50g crust : 75g filling.
- 150g mold: Divide in a ratio of 60g crust : 90g filling

Bake the cake for the first time
Next, preheat the air fryer at the highest temperature for 15 minutes. Then take the air fryer out, line the bottom with a layer of parchment paper, and gently place the cake inside.
Bake the cake for the first time at 150 degrees for 5 – 7 minutes.
Tip:- During the baking process, you need to prepare a spray bottle with water and a bowl of egg yolk to brush the surface of the cake. For cakes weighing 125g or more, you should bake for 8 – 10 minutes.
- You can use a mixture of 1 egg yolk, a little fresh milk, and a little cooking oil to brush the surface of the cake. This mixture will help the surface of the cake to be shinier and more fragrant.

Bake the cake for the 2nd and 3rd time
After finishing the first baking, you open the oven and lightly spray the cake’s surface with a spray bottle. This helps to cool the cake and prevents it from cracking on the surface.
Let the cake cool for about 5 – 7 minutes, then use a brush to spread the egg yolk mixture over the entire cake. Remember to apply a thin layer and avoid letting the egg mixture pool too much on the cake’s surface, as this will make the cake lose its definition.
Place the cake back in the oven and continue baking at 150 degrees for 5 minutes. After the baking time, take the cake out of the oven and repeat the water spraying and brushing the cake’s surface.
Finally, bake the cake for the 3rd time at 150 degrees Celsius for 5 minutes. The third baking mainly helps the cake to dry and achieve a nicer golden color. If the cake is not yet dry and golden to your liking, you can increase the baking time for the 3rd time.
