Winter melon jam 100 gr Garlic 40 gr (minced) Red chao A little (2 pieces) Red chao water 2 tablespoons Cooking oil 100 gr Chicken egg 1 piece Malt syrup 1 tablespoon Powdered sugar 90 gr Salt 1/2 teaspoon Five-spice powder 1/2 teaspoon White sesame 1/2 teaspoon Ground white pepper 1/2 teaspoon All-purpose flour 310 gr Baking powder 1 teaspoon White sesame 30 gr Black sesame 30 gr

How to Make Chao Cake

  • Grind the Pumpkin Jam

    You will use scissors to cut the pumpkin jam into small cubes. Garlic should be peeled and then chopped finely.

    Put the garlic and pumpkin jam into the meat grinder, then proceed to grind the mixture until smooth and set aside.

  • Mixing the dough

    You prepare a large bowl, add 2 red fermented tofu cubes and 2 tablespoons of fermented tofu water into the bowl, then use a fork to mash the tofu.

    Next, add 100g of cooking oil into the bowl, crack in 1 egg and add 2 tablespoons of maltose.

    Use a whisk to mix the above mixture well, then add the pureed mixture of garlic and pumpkin jam, 90g of sugar, 1/2 teaspoon of salt, 1/2 teaspoon of five-spice powder, and 1/2 teaspoon of ground white pepper, then mix well.

    Sift 310g of flour and 1 teaspoon of baking powder into the above mixture, add 30g of black sesame and 30g of white sesame, then mix until all the dry flour is incorporated. At this point, the dough will be quite sticky; put on gloves and knead the dough until it forms a ball.

    Finally, cover the bowl with plastic wrap and let the dough rest for 30 minutes.

  • Shaping and Baking

    The dough after resting will be less sticky, you divide the dough into equal round balls of about 10g. Before that, you should prepare a baking tray lined with parchment paper, after rolling the dough balls, place them on the tray.

    Next, you use a round-surfaced object to flatten the dough ball.

    You preheat the oven to 150 degrees Celsius for 10 minutes, then place the bao dough on the tray in the oven, set to dual heating mode (dual heating element mode), and bake at 150 degrees Celsius for 18 – 20 minutes.

  • Final Product

    The baked bao will have a beautiful brown color, you should let it cool completely in a ventilated place and then store it in a sealed bag or food container for preservation.

    When eaten, the bao will be crispy in the mouth, fragrant with sesame, and have a sweet and salty taste, delicious and rich, the more you eat, the more you like it.

How to make Chao Cake from Mooncake

  • Mash the mooncake

    To make chao cake, you should choose mooncakes with mixed fillings. Mooncakes with salted egg yolk will taste better, but regular ones are also fine.

    Break the mooncake into small pieces, then use your hands to mash it until the crust and filling become fluffy.

  • Mixing the dough

    You add 50g of wheat flour, 1 tablespoon of minced garlic, 1 tablespoon of malt syrup, and 1 piece of red fermented tofu into a bowl for making mooncakes. Remember to add a little of the fermented tofu water to make the cake more aromatic.

    Use a whisk to mix the ingredients until all the dry flour is incorporated, then knead with your hands until the dough forms a smooth ball.

    Tip: Depending on the dryness of the mooncake dough, you may need to use more or less flour.
    • If the dough mixture is still too wet, add more flour.
    • If the dough is too dry, add a little cooking oil and continue kneading to form a dough ball.

  • Shaping and baking the cake

    You divide the dough into small balls as desired and gently press them down to flatten slightly. The thinner the fermented tofu cake is rolled, the crispier it will be, so you can choose to roll the dough to your preferred thickness.

    Arrange the cakes on a tray lined with parchment paper, and place the tray in the air fryer to bake for 20 minutes at 180 degrees Celsius.

    Tip:
    • Check and flip the cakes every 5 minutes while baking.
    • Depending on the thickness of the cakes, the baking time may vary. Therefore, keep checking to take the cakes out in time.
