How to prepare Basa Fish Porridge

Prepare the ingredients
Fresh basa fish should be washed with diluted salt water to remove the fishy smell. For better results, you can rub a little minced ginger on the fish skin to eliminate the fishy slime.
Pick young leaves of the water spinach and wash them clean, then let them drain.
Peel the taro, wash it clean, and cut it into small pieces to help it soften faster. Taro has quite a sticky sap, so you should wear gloves when peeling it.
Wash the lemongrass and cut it in half, then use a pestle to crush the ends. Peel the shallots, wash them clean, and cut them into thin slices.

Steaming Fish
Place a steamer pot on the stove, add water to the steamer pot and bring to a boil. When the water in the pot boils, proceed to add crushed lemongrass to the steamer and then place the fish on top of the lemongrass.
Cover and steam over medium heat until the water in the pot is gently boiling; do not let it boil too vigorously as it may dry out your fish. Steam the fish for about 5 minutes until the flesh is cooked, then remove the fish to cool.

Cooking Porridge
Add a small amount of rice, about 50-100g, to the pot, then pour in 2 bowls of water. Next, add the diced taro into the pot. Place it on the stove and cook over medium heat for about 30 minutes.
When the porridge comes to a strong boil, skim off the foam from the surface of the pot, reduce to medium-low heat, and continue to simmer until the taro is soft and the rice grains are tender.
After about 30 minutes, the porridge in the pot should be soft and the grains expanded, so turn off the heat and remove the taro to a plate to cool slightly.
Next, add the taro to a blender to puree. If you don’t have a blender, you can also push it through a sieve to mash it up.

After letting the fish cool, proceed to chop the fish meat into small pieces. You should not chop the fish while it is still hot, as this will make the fish dry and lose its sweetness.
Chop the water spinach finely. Place the chopped fish and chopped vegetables on a plate. If your baby is between 5 – 7 months old and has a weak digestive system, you can put the fish into a blender to make it easier for your baby to digest.

Cook basa fish porridge
Place a pan on the stove, add a little cooking oil to the pan. When the oil is hot, add the finely chopped shallots and sauté until fragrant and golden. When the shallots are aromatic, add the chopped basa fish and stir-fry over medium heat for 2 minutes until the fish meat firms up.
Next, add about a small bowl of porridge along with the mashed taro and chopped water spinach to the pan and stir well. Cook and stir the porridge for 2 minutes over low heat, then turn off the heat. Scoop the porridge into a bowl and let your baby enjoy.
