How to make Dry Green Sticky Rice using a rice cooker
-
Cook the sticky rice
Rinse the mung beans and sticky rice several times with water, then place them into the rice cooker, add 1/2 teaspoon of salt and 550ml of water, and select the Sweet rice (sticky rice) cooking mode.
Tip: If your rice cooker does not have a sticky rice cooking mode, you can choose the regular rice cooking mode instead. -
Cook the lotus seeds
Rinse the dried lotus seeds with water, then place them into the pressure cooker along with 500ml of clean water and 1/4 teaspoon of baking soda. Choose the high-pressure cooking mode for 5 minutes, and let the valve release naturally for 10 – 15 minutes.
After the lotus seeds are cooked, remove them and drain.
Tip: Adding baking soda while cooking the lotus seeds will help them soften faster. If you do not have baking soda, the cooking time will be longer. -
Cooking dry green sticky rice
The flat green rice should be soaked in water for 2 – 3 minutes, then washed again and mixed with 1 tablespoon of coconut oil to keep the rice grains separate and not sticky.
When the sticky rice and mung beans are nearly cooked, add 1 tablespoon of coconut oil, mix well to fluff the rice, then add the flat green rice and mix once more. After that, close the rice cooker lid and let it cook for another 10 – 15 minutes to finish.
