How to choose fresh chicken leg mushrooms

  • When choosing chicken leg mushrooms, you should select those with vibrant colors and a length of 12 – 15cm. If they are too long, the inside of the mushrooms will often be hollow and lack fresh flavor.
  • Choose mushrooms with a brown, shiny cap that are not scratched or torn and have no bruises or wrinkles. If the chicken leg mushrooms are fresh, they will have a thin layer of fuzz on top of the cap.
  • Do not choose chicken leg mushrooms that have an unpleasant rotten smell or are bruised, as these are spoiled and cannot be used.

  • Prepare the Ingredients

    Wash the green onions and chop them finely.

    Cut the chicken thigh mushrooms into strips about 1/2 finger width. Grate the carrots into long strips.

    Cut the pre-fried tofu into strips about 1/2 finger width as well.

    For the cucumber, scoop out the flesh, discarding the seeds and both ends. Then cut it into long strips about 1/2 finger width.

  • Mix the Rice

    Take a small bowl, add 1 spoon of sugar, 1/2 teaspoon of salt, and 2 teaspoons of vinegar, then stir well.

    Once the salt and sugar have dissolved, pour the mixture over the rice in the bowl and mix well to let the rice absorb the seasoning.

  • Stir-fry the filling

    Heat a pan with 1 tablespoon of cooking oil over medium heat. Then add finely chopped scallions and sauté until fragrant.

    When the scallions are golden, add the shredded corn, chicken mushrooms, and carrots, and stir-fry for about 2 minutes.

    Season with 2 teaspoons of vegetarian seasoning, then stir everything together to absorb the flavors, taste again to adjust the seasoning, and turn off the stove.

  • Roll the sushi

    First, lay the bamboo sushi mat down and then place a sheet of seaweed on top.

    Next, spread the rice evenly over 4/5 of the seaweed sheet. Then sprinkle 20g of roasted sesame seeds over the rice.

    Now we will place cucumber, the stir-fried filling, and fried tofu in a line horizontally across the seaweed.

    Then use your hands to roll tightly from the bamboo mat inward; once you make one complete roll, press it firmly to create a round sushi shape and then release it.

    After that, keep using the bamboo mat to roll it one more time, pressing it tightly and evenly until the seaweed is completely rolled.

    Once you’ve rolled the rice, cut the sushi roll into pieces about 1/2 finger thick and arrange them on a plate, and you’re done.

    Note:

    • At this step, you may not need to use the bamboo sushi mat, but it helps you roll tightly and makes the sushi more even.
    • To make the cut sushi roll look more attractive, you should use a very sharp knife and before cutting, brush a thin layer of cooking oil on the knife to prevent it from sticking to the rice.
