What is cocoa powder?
- Cocoa powder is a type of powder made from the seeds of the cocoa fruit. The powder is dark brown, has a strong fragrance, and a slightly bitter, nutty taste.
- There are 2 types of cocoa powder on the market: ready-made and pure types. Depending on personal preference and intended use, users can choose the type of powder that suits them.
Distinguishing cocoa powder and chocolate powder
- Cocoa powder is ground from chocolate liquor after the liquid has been pressed out (removing cocoa butter). This type of powder can be light or dark brown (depending on the alkalization process), has a bitter taste, and occasionally a slight sourness.
- Chocolate powder is a mixture of cocoa powder and cocoa butter, blended with sugar and milk. This type of powder is divided into 3 types: dark chocolate, white, and brown, corresponding to flavors such as bitter, moderately sweet, and sweet-bitter.

- Cream cheese, also known as soft cheese – this is a type of cheese made from cow’s milk or goat’s milk, has a white color, soft texture, and a very distinctive sour and salty taste.

How to make Red Velvet Sponge Cake using a rice cooker

Sift the flour and prepare the milk mixture
First, sift into a bowl the mixture of 215g all-purpose flour, 10g cocoa powder, 3g salt, 6g baking powder, and 6g baking soda.
Next, add 180ml of unsweetened fresh milk and 15ml of white vinegar into a new bowl, stir well, and let the mixture sit for 10 minutes.

Beat butter, sugar, and eggs
Add 100g of sugar, 10ml of vanilla extract, and 150g of softened unsalted butter into a new bowl. Use a whisk to mix the mixture until smooth.
Next, add each egg one by one into the butter mixture and continue to stir until well combined.
Finally, add a little red food coloring (about 2.5 – 5ml), the milk and vinegar mixture, and stir well one more time to finish.
Tip: The amount of food coloring needed for the butter mixture will depend on the type of coloring you are using. Therefore, you just need to add it until you achieve the desired color. -
Mix the cake flour mixture
Add the sifted dry flour to the butter mixture, using a whisk to mix well until a smooth flour mixture is obtained, without lumps.

Cooking the Cake
Line a piece of parchment paper in the rice cooker, then use unsalted butter to spread evenly on the parchment paper and around the pot. Next, sprinkle a thin layer of flour to prevent sticking.
Then, pour the cake batter in, press the Cook button for the first time, and bake the cake for 30 minutes.
After 30 minutes, repeat the Cook button press two more times for the cake to be done.
Note:
- For a regular rice cooker (not a digital rice cooker), the Cook mode will only light up for about 10 – 15 minutes before automatically switching to Keep Warm mode. Therefore, from the first Cook press, be sure to time it exactly 30 minutes, and only after this time can you press the next Cook button. Avoid pressing Cook continuously as it may cause the bottom of the cake to burn.
- The number of Cook presses will depend on the type of rice cooker you are using, so after each Cook session, you must check the cake.
- Use a sharp toothpick to poke the cake; if it comes out dry and not sticky, then the cake is done.
- To prevent the cake from collapsing, when the cake is done, let it rest in the pot for about 15 – 30 minutes before taking it out. Additionally, do not open the rice cooker lid too often during the baking process.

Mix the frosting layer
Add 230gr cream cheese, 60gr unsalted butter, 100gr powdered sugar, 15ml vanilla extract into a bowl, and use a hand mixer to beat the mixture until well combined and smooth.

Decorate the cake
Spread an even layer of cream cheese frosting over the cooled sponge cake, then sprinkle a layer of cocoa powder to finish.
