How to make Green Tea Sponge Cake using an Air Fryer

Mix the egg yolk mixture
Add 3 egg yolks, 40g of sugar, and 1ml of vanilla into a bowl, then use a whisk to mix well until the mixture is combined.
Next, add 50g of melted butter and 20g of green tea powder, then continue to mix evenly.

Mix the cake flour
Add 100g of sifted flour and 40ml of fresh milk to the mixture above, then mix well until the ingredients are blended and smooth.

Whip the egg whites
Place 3 egg whites into a bowl, add 1/4 teaspoon of salt, and use a whisk to beat until the egg whites form tiny bubbles.
At this point, add 3ml of lemon juice and continue to whisk.
Divide 40g of sugar into 3 portions, adding each portion one at a time while whisking until dissolved before adding the next portion. Whip quickly and evenly until the egg whites are soft and fluffy, with a creamy texture, sticky, shiny, and smooth. Lift the whisk to create stiff peaks that bend slightly to indicate readiness.
Note:
- Egg whites should be at room temperature before whipping.
- You can use an electric mixer to save time and should gradually increase the mixing speed from low to high!

Mix the cake batter with egg whites
Divide the egg whites into 3 portions, adding each portion to the cake batter and gently folding the mixture from the bottom up. Insert the spatula to the bottom of the bowl, lift the heavier ingredients up, and fold them to the side. Continue this process until the mixture becomes smooth.
Note: Do not mix vigorously as it will break the small air bubbles, preventing the cake from rising. -
Pour into the mold
Line the mold with a layer of parchment paper and brush butter on the sides, then pour in the batter.

Baking the cake
Preheat the air fryer to 180 degrees Celsius for 10 minutes, then place the cake in to bake for 20 minutes at 165 degrees Celsius.
Tip: You can use aluminum foil to cover the top of the cake to ensure the cake does not dry out! -
