Whip the egg whites
Add 6 egg whites into a bowl and use the mixer on low speed until small bubbles form like soap.
Next, divide 180gr of sugar into 4 portions, adding each portion to the egg whites and continue mixing on medium speed until the sugar dissolves.
When adding the last portion of sugar, increase the mixer speed to high until the egg whites are fluffy and soft, and when you lift the whisk, the peaks form but bend down, that’s perfect.

Beat egg yolks and flour
Next, gradually add 6 egg yolks into the bowl of egg whites. Continue to beat until the mixture is completely blended.
Then, sift 140gr of cake flour into the egg mixture. Use a flat whisk to gently fold the mixture from the bottom up. Bring the whisk down to the bottom of the bowl, lift the heavier ingredients up, and flip them to the side. Continue this process until the mixture is well combined.
Tip:- You can replace 140gr of cake flour with 120gr of all-purpose flour and 20gr of cornstarch, then sift again until very fine before mixing!
- This is the folding technique in baking; you should mix correctly to avoid breaking large air bubbles, otherwise, the cake will be dense and won’t rise.

Mix the cake batter
In a new bowl, add 30g of cocoa powder, 60ml of cooking oil, and 80ml of unsweetened milk, then stir well until smooth. Next, take a little bit of the egg mixture from step 3 and add it to the cocoa bowl, mixing thoroughly.
Then, pour the mixed batter back into the egg mixture bowl and gently mix to combine.

Bake the cake
Preheat the oven to 160 degrees Celsius for 10 minutes.
Line the cake pans with parchment paper, then divide the batter and pour it into 2 pans. Next, gently tap the pans on the table to spread the batter evenly and break large air bubbles. Bake the cakes at 160 degrees Celsius for 30 minutes.
Once the cakes are baked, let them cool, then use a knife to cut them horizontally into 3 equal thick pieces.

Whip cream cheese
Put 227g of cream cheese in a bowl to soften at room temperature, then use a mixer to whip until the cream is smooth and creamy.
Next, add 180g of powdered sugar and continue to whip until the mixture is smooth.

Make the frosting
Put 400ml of whipping cream in a new bowl and use a mixer to whip until the cream is stiff enough to form peaks when the whisk is lifted.
Next, add the cream cheese mixture to the whipping cream, then use a spatula to gently fold until combined.
Then, divide the frosting mixture into 4 equal parts, and mix 3 parts with a little red food coloring to create pink. The remaining frosting should be mixed with green food coloring.

Decorating the cake
First, add 100g of sugar to 200ml of boiling water and stir well until the sugar dissolves to make sugar syrup.
Use a brush to apply a layer of syrup on the first piece of cake, then spread a layer of pink cream on top and smooth it out. Repeat this process until you finish with the third piece of cake and cover the entire cake with the remaining cream.
Next, use a sharp stick to draw wavy lines on the surface of the cake as desired, then add the text “HAPPEE BIRTHDAE HARRY”. Finally, use the green cream to outline the letters.
