How to prepare Purple Sweet Potato Fried Dough

Prepare the ingredients
Purple sweet potatoes, papaya, and carrots should be peeled, washed thoroughly, drained, then shredded and separated by type.
To keep the carrots and papaya crispy when eating, soak the carrots and papaya in a bowl of cold ice water until ready to serve.
Wash the chili, remove the stem, and chop it finely. Wash the green onions, remove the roots, and chop them small.

Mix the flour
You put 150g of rice flour, 40g of starch, 250ml of water, 1 teaspoon of salt and 1/2 teaspoon of sugar into a bowl, squeeze the juice of 1/2 lemon into the flour bowl.
You use a spoon to stir the flour mixture evenly, then let it rest for about 30 minutes.
Next, you put a pot on the stove over medium heat, add the flour and continuously stir for about 5 – 7 minutes until the flour thickens, then add the shredded purple sweet potato, continue to stir for another 2 minutes and then turn off the heat.

Steaming the dough
You prepare a mold, coat it with a thin layer of oil, then pour the dough mixture into the mold, spread it evenly, and press the dough tightly. Steam for about 40 minutes until the dough is cooked.
Once the dough tray is cooked, let it cool and place it in the refrigerator for about 3 hours.
Next, take the dough tray out of the refrigerator, invert it onto a cutting board, and cut it into bite-sized pieces about 2 finger lengths.

Making the dipping sauce
Put 3 tablespoons of soy sauce, 2 tablespoons of sugar, 1 tablespoon of vinegar, and 2 tablespoons of water into a bowl, then stir well. Adjust the seasoning to taste, and the dipping sauce is ready.

Place a pan on the stove over medium heat, add 2 tablespoons of cooking oil to the pan, wait for the oil to heat up, then add the batter to fry for about 3 – 4 minutes until both sides are golden brown.
