Ingredients for Fried Pho For 2 people
Whole pho sheets 100 gr Accompanying vegetables A little (lettuce/ basil/ coriander) Garlic 2 cloves Fresh chili 2 fruits Cooking oil 3 tablespoons Fish sauce 1 tablespoon Lemon juice 1 tablespoon Sugar 1 tablespoon
How to choose and where to buy good pho sheets
- When buying, you should choose pho sheets that are translucent white, not yellowing, feel firm and smooth to the touch, and have a shiny surface without being crumbly.
- Unlike other pho dishes, to make this dish you need to choose the whole rolled pho sheets, still intact, not cut into strips, and have the characteristic aroma of rice flour.
- This type of whole rolled pho sheets can be found in traditional pho-making establishments or in places selling pho, egg noodles, and wontons in large markets, or you can also find them on reputable e-commerce websites.
- The price range for 500gr of rolled pho is 10,000 – 12,000 VND (price updated in September 2021).
How to make Fried Pho
-
Prepare the ingredients
If the rice noodle sheets you bought are still whole, use your hands to separate them into small pieces about 5 sheets thick (or 1/4 of a finger), then cut them into small squares suitable for eating.
Tip: You should not separate the pho into thin pieces because when fried, the noodles will not puff up and become crispy. The types of fresh vegetables to accompany should be picked to remove any wilted or damaged leaves, washed thoroughly with water, and drained.
Peel the garlic, rinse with water, and mince finely. Remove the stems from the chili and chop finely.
-
Fry the pho
Place a pan on the stove over medium heat, add 3 tablespoons of cooking oil, and wait until the oil is hot, then add each piece of pho to fry for about 15 minutes until the noodles are golden and crispy on both sides, then remove to a plate and drain the oil.
Small tip: Be careful not to add too many pieces of pho at once while frying as they may stick together, and avoid flipping them too many times as they will not puff up. -
Making Dipping Sauce for Pho
Put into a bowl (rice bowl) 1 tablespoon of fish sauce, 1 tablespoon of lime juice, 1 tablespoon of sugar, 2 tablespoons of water, add minced garlic and chili, and mix all the ingredients together.
Tip: To make the garlic sauce float on top of the bowl, you should chop the garlic finely and add it last. -

Place the crispy fried pho on a plate, serve with sweet and sour fish sauce, assorted fresh vegetables or pickled carrots for a delicious, attractive, and highly flavorful dish.
