How to make Soul Cake

Beat the butter and egg mixture
Put 175g of unsalted butter at room temperature into a large bowl along with 175g of sugar, then use a mixer to blend until the mixture becomes fluffy and light yellow in color.

Sift into the butter: 450g of flour, 2 teaspoons of mixed spices, then add 100ml of unsweetened fresh milk and use a spatula to mix until the ingredients are combined.
Next, transfer the mixture to the table and knead the dough with your hands (gather the dough and press firmly to combine the ingredients) until the dough forms a smooth, uniform mass.

Next, sprinkle 70g of raisins on the surface of the dough and knead again to mix the raisins evenly with the dough.

You preheat the oven to 190 degrees for 15 minutes.
Use a rolling pin to flatten the dough to a thickness of about 1/3 of a small finger. Next, use a round mold to cut the dough into several round pieces.
Then, place the cakes on a tray lined with parchment paper, then use a knife to lightly score the surface of the dough in a cross shape and bake for 20 minutes at 190 degrees Celsius.
