How to make Soul Cake

  • Beat the butter and egg mixture

    Put 175g of unsalted butter at room temperature into a large bowl along with 175g of sugar, then use a mixer to blend until the mixture becomes fluffy and light yellow in color.

    Next, add 3 egg yolks and continue mixing with the machine until well combined.

    Tip:

    • The butter should be softened at room temperature; when pressed with your hand, it should be soft enough but not melted or runny.
    • It’s important to beat the butter well because the cake’s rise and fluffiness depend on the air bubbles that form when the butter is whipped.

  • Mix the cake flour

    Sift into the butter: 450g of flour, 2 teaspoons of mixed spices, then add 100ml of unsweetened fresh milk and use a spatula to mix until the ingredients are combined.

    Next, transfer the mixture to the table and knead the dough with your hands (gather the dough and press firmly to combine the ingredients) until the dough forms a smooth, uniform mass.

  • Knead the dough with raisins

    Next, sprinkle 70g of raisins on the surface of the dough and knead again to mix the raisins evenly with the dough.

  • Shape and bake the cake

    You preheat the oven to 190 degrees for 15 minutes.

    Use a rolling pin to flatten the dough to a thickness of about 1/3 of a small finger. Next, use a round mold to cut the dough into several round pieces.

    Then, place the cakes on a tray lined with parchment paper, then use a knife to lightly score the surface of the dough in a cross shape and bake for 20 minutes at 190 degrees Celsius.

    Finally, place the cakes on a high rack to cool and sprinkle a little powdered sugar on top to finish.
