- When touching the veins on the skin, it should feel smooth, and there should be no black spots on the skin, indicating fresh gourd.
- Avoid choosing gourds that feel light, are soft when pressed, have hollow and spongy insides, have scratched skins, and have withered stems, as these are either spoiled gourds or those that have been poorly handled during transport.

Prepare the ingredients
Clean the roots of the mushrooms, then soak them in 1 tablespoon of diluted salt for about 10 – 20 minutes, then rinse thoroughly and drain in a basket.
Use a peeler to remove the green skin of the gourd, soak the gourd in a little diluted salt water, then rinse a few times with clean water, drain in a basket, and cut the gourd into bite-sized slices crosswise.
Peel the shallots and garlic, wash them clean, and then chop finely.

Stir-fried gourd with mushrooms
Place a pan on the stove, add 4 tablespoons of cooking oil and turn on medium heat, when the oil is hot and bubbles start to form, add chopped shallots and garlic and stir for about 3 – 5 minutes.
When the shallots and garlic are fragrant and golden, add the mushrooms and stir-fry together. Stir the mushrooms for 3 – 5 minutes, then add the gourd, gently stir and add a mixture of seasonings including: 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, 1/2 teaspoon of salt.
Continue to stir gently for about 5 – 7 more minutes, when you see the gourd releasing water and becoming soft, adjust the seasoning to taste and then turn off the heat.
