How to choose fresh and delicious ingredients
How to choose fresh and delicious loofah
- When buying, you should select loofah fruits that are medium-sized and small. Because these fruits will be sweeter and more fragrant when eaten.
- In addition, loofah fruits have an elongated shape, uniform color, and no black spots on the skin.
- Moreover, loofah has a dark green color, feels firm when held, not too soft, and has a natural fragrant smell, which are signs of good loofah.
- Do not buy loofah that is too large, has blemishes on the skin, or is dark green as these fruits may be spoiled and have been over-fertilized.
How to choose fresh and delicious bean sprouts
- For bean sprouts, you should choose those that are not too thick and uneven because sprouts with thick and uniform stems are likely chemically treated.
- When buying, you should select bean sprouts that are curved and not shiny as those are naturally grown.
- Avoid choosing bean sprouts that have unusual lengths as those may have been treated with chemicals.
- Additionally, to ensure food safety, you can also refer to the simple method of making bean sprouts at home from TasteVN.

How to Prepare Stir-fried Loofah with Bean Sprouts
-
Prepare Ingredients
Buy fragrant loofah and use a peeler to remove the skin, then wash it clean and cut it diagonally into bite-sized pieces.
Soak the bean sprouts in diluted salt water for about 15 minutes, then rinse with clean water and drain.
Peeled shallots, sliced. Remove the stem from the chili, wash it clean, and slice it.
Tip: To keep the loofah crunchy and firm, when peeling, you should peel it very thinly and gently! -
Stir-fry Loofah
Place a pan on the stove, add 1/2 tablespoon of cooking oil. Wait until the oil is hot, then add the shallots and sauté until fragrant, then add the loofah and stir-fry for about 3 minutes over high heat.
Continue to add the bean sprouts, stir well 1 – 2 more times over medium heat, then season with 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, and 1 tablespoon of seasoning powder. Mix well for another 2 minutes, adjust the seasoning to taste, and then turn off the heat.
Finally, you just need to plate the dish, decorate with a few slices of chili for extra appeal, and it’s done.
Tip:- To keep the loofah crunchy and sweet, stir-fry over high heat and do not let the loofah cook too much.
- To avoid the bean sprouts becoming soft and losing flavor, do not add them at the beginning of the stir-frying process.
