  • Fresh banana flowers usually have a dark red outer layer, with a smooth white powdery coating, intact appearance, and no bruising.
  • Choose banana flowers that feel firm when held, and when gently squeezed, the outer layer feels hard and has a certain crispness.
  • Avoid purchasing banana flowers with unusual colors or dark spots, as these may be flowers that have been treated with chemicals or have been stored for too long.

How to prepare Stir-fried Frog with Banana Flower

  • Prepare the ingredients

    Frogs bought should be cleaned, removing all internal organs. If you do not eat frog skin, peel it off and wash with the juice of about 1 lemon for about 2 – 3 minutes to remove the sliminess, then rinse with clean water.

    Next, use a knife to chop the frog meat into bite-sized pieces.

    Tips to eliminate odor and effectively clean frog meat:
    • For frogs, cut off the head, internal organs, backbone, and blood vessels on the frog thighs. Additionally, you can remove the skin if you do not want to eat it.
    • Then, wash the frogs with a mixture of vinegar and diluted salt for about 5 minutes, then rinse with clean water.
    • Alternatively, you can wash the frog meat with a mixture of ginger and alcohol for about 2 minutes, then take it out and let it drain before cooking.

    Banana flowers should be chopped finely, then placed in a bowl of water, squeezing the juice of 1 lemon into it and soaking for about 20 minutes, then rinse with water and let it drain.

    Garlic should be peeled and minced, spring onions should be cleaned, washed, and cut into sections.
