How to choose fresh duck meat
- For live ducks: Choose ducks with shiny, smooth feathers, press the breast area to feel a lot of firm, round meat, and thick skin on the neck and belly. Additionally, if you can cross the two duck wings together, it means the duck is mature and the meat quality is up to standard.
- For processed ducks: Choose ducks with bright skin, light yellow leaning towards white, without any bruises or blood clots. Pressing the meat should feel firm and elastic for it to be good quality. Avoid purchasing if the duck appears dull, soft, or has a foul smell.
- To buy the freshest duck, you should go directly to a duck farm for live ducks. For processed ducks, you should purchase from reputable supermarket chains!

Prepare and Marinate Duck Meat
Wash the duck thoroughly, massage it with finely chopped ginger and a little salt. After that, let it sit for 15 minutes, then rinse with clean water and let it drain.
Place the duck in a large bowl with 1/2 teaspoon of soy sauce and rub it evenly all over the duck.

Prepare other ingredients
Shiitake mushrooms bought home should be rinsed briefly with water and then soaked in warm water for about 30 minutes to soften.
Peel the ginger, wash it clean with water, drain, and then cut into strips. Peel the garlic and crush it.
Wash the scallions, drain, and then cut diagonally into pieces about 1.5 finger lengths long.

Fry the duck
Put a pan on the stove, add about 200ml of cooking oil into the pan. Wait for the oil to heat up, then add 2 teaspoons of tapioca flour and stir well until the flour dissolves completely.
Next, add the duck and fry until golden brown on both sides, then remove, wash with water, and drain. After that, cut the duck into bite-sized pieces.

Place a pan on the stove, add 2 tablespoons of cooking oil. Wait for the oil to heat, then add ginger and garlic to sauté until fragrant.
Next, add the mushrooms and stir-fry for about 1 minute, then add 2 blocks of red fermented bean curd into the pan.
After that, add the duck meat and stir-fry together until the duck meat is firm, then add 2 teaspoons of soy sauce, 2 teaspoons of oyster sauce, 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, 2 teaspoons of sugar, 1 teaspoon of seasoning powder, and 1/2 teaspoon of ground pepper, and stir-fry for another 2 – 4 minutes before turning off the heat.

Stew duck
Add the sautéed duck into a pot and place it on the stove. Next, pour water into the pot so that it barely covers the duck meat, then cover the pot and stew for 20 minutes.
After 20 minutes, lift the lid, add 2 teaspoons of sesame oil, scallions, and adjust the seasoning to taste, then turn off the heat and transfer everything to a plate.
