  • Do not buy ducks that are less active or lethargic, as they may be sick. For processed ducks, avoid buying those with unusual bruises on their bodies.

How to choose fresh carrots

  • Choose carrots that have a naturally dark orange color, long and tapered from head to tail; these are fresh carrots.
  • Carrots that still have green tops tightly attached to the body, maintaining the fresh green color of the leaves are good, freshly harvested carrots. The longer they are kept, the more the carrot tops dry out and eventually fall off.

How to cook duck with plum

  • Prepare the duck meat

    With one pre-prepared duck, after purchasing, you should use white wine and a fresh ginger root (mashed) to rub over the skin of the duck from the inside out for about 5 minutes to clean and eliminate the fishy smell of the duck.

    Then, chop the duck into medium-sized pieces.

    Add to the duck meat 1.5 tablespoons of fried garlic oil, 270ml of plum chili sauce, 2 tablespoons of ketchup, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of ground pepper, 1 tablespoon of color powder, 1 tablespoon of seasoning powder, 2 tablespoons of fish sauce, 1/2 teaspoon of salt, 2 tablespoons of sugar, mix well so that the duck meat absorbs the spices, then let it marinate for 15 minutes.

  • Prepare other ingredients

    First, peel 1 pineapple (about 800gr), cut it into small round slices, each slice cut into 4 parts.

    Next, cut 2 onions into wedges, and 1 carrot into large round slices about the size of a thumb.

  • Blend the pineapple juice

    Add 1/2 of the prepared pineapple into the blender, add about 4 tablespoons of coconut water, and blend until smooth, then strain the pineapple pulp, only using the juice.

  • Cook the duck meat

    Turn on the stove to high heat, add the marinated duck meat along with the marinade into the pot, stir for about 3 minutes until the meat is firm, then add the blended pineapple juice and cook until boiling for about 15 minutes.

    Next, add the remaining pineapple, carrots, and coconut water, and continue to cook the duck until it boils again for about 15 minutes, then season with about 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of fish sauce to taste.

    Finally, add the onion and cook for an additional 1 – 2 minutes, then add a little coriander to turn off the heat.

    Tip: While cooking, if bubbles appear on the pot of meat, be sure to skim them off!
