How to Choose Fresh Shallots

  • It is advisable to buy northern shallots for frying as they contain less water, making the frying process quicker and resulting in a crispier texture.
  • Choose shallots that are firm, have dry skins, and are uniform in size.
  • The shallots should have a dry outer layer that is easy to peel off. Avoid purchasing shallots that have sprouted, are wet, have soft spots, or are dented at the root as they tend to spoil quickly.

  • Prepare the Shallots

    After purchasing the shallots, cut off the roots and peel the outer skins, then wash them thoroughly and let them drain.

    Next, use a peeler to slice the shallots thinly from the root downwards.

    Place a pan on the stove, add 100ml of cooking oil and heat it up.

    Use chopsticks or a few pieces of onion to test the oil; when you see bubbles around the chopsticks or the onion pieces floating up for about 1 second, it’s ready. At that time, slowly add the onion into the oil pan to fry.

    Turn the heat down low, and use chopsticks to stir gently and continuously, avoiding burning the onions.

    After about 15 minutes, when the onions start to turn golden, quickly remove them from the oil.

    Tip:

    • To make the fried onions golden, fragrant, and crispy, you should use an aluminum pan to keep the temperature stable while frying the onions.
    • Using salt helps the onions become crispy faster and keeps the onion temperature stable; add a little flour to make the onions thicker and hold their shape.
    • To prevent the onions from becoming soggy while frying, you should sun-dry the onions for a bit!
    • Additionally, to make the onions crispier, you should fry them in smaller portions.

    Transfer the fried onions to a bowl or a paper towel and spread them out to let them cool, drain the oil, and become crispier.

    Once the onions have cooled, you can place them in a glass jar with a tight lid for storage.

    Note: It is advisable to let the fried onions cool completely before placing them in the container to keep them fresh longer, preventing them from becoming soggy or broken!
