How to distinguish between Vietnamese and Chinese red shallots:
- Chinese red shallots are large, round bulbs, usually with only 1 clove, light red in color, not fragrant, and have thin skin.
- Vietnamese red shallots usually have about 2 to 3 small cloves. Choose small and pointed bulbs, often with several cloves on one bulb, thick skin, and a distinctive fragrant scent of shallots.

How to cook Fried Shallots using an Air Fryer

Prepare the red shallots
Peel all the skin off the red shallots and then rinse them thoroughly to remove any dirt, and let them drain.
Slice or grate the shallots into thin slices as shown.
Tip:
To make the shallots crispier, you can sun-dry them until slightly wilted (do not dry them completely).

Fry Shallots
Put the chopped shallots at the bottom of the air fryer as shown in the picture. Remember to spread the shallots evenly!
Add 2 tablespoons of cooking oil to the shallots to make them more fragrant and rich. Use chopsticks to stir well, then cover with a mesh tray to prevent the shallots from flying around in the fryer.
Place the tray in the fryer and set it to 160 degrees for 5 minutes.
After that, take the tray out and stir the shallots evenly, cover with the mesh tray again and put it back in the fryer. Adjust to 140 degrees and fry for another 5 minutes.
Continue to take the shallots out and stir well for even cooking. Cover again and fry for an additional 10 minutes at 140 degrees Celsius. And that’s it, the fried shallots are done.
