Mixing the bread dough
First, warm 100ml of unsweetened fresh milk until it reaches a temperature of about 40 degrees Celsius, then turn off the heat.
Next, add 4g of instant yeast to the milk bowl, stir well and let it sit for about 5 – 10 minutes for the yeast to bloom into a mass like crab bricks.
Note:
- For instant yeast, you can mix it directly with milk at room temperature. However, to ensure the yeast is still active, it is recommended to follow the steps above.
- However, the milk temperature to activate the yeast should only be between 32 – 40 degrees Celsius, as higher temperatures will kill the yeast or weaken its activity.
Then, add to a new bowl 125g of finely sifted flour, 20g of condensed milk, 2 teaspoons of cooking oil, 1/2 teaspoon of salt, and the activated yeast mixture. Mix well until all ingredients bind together into a homogeneous mass.

Proofing the bread dough
Take a damp cloth and cover the bowl of dough from step 1, then let it proof at room temperature for 2 hours until the dough doubles in size.
After 2 hours, wrap the bowl of dough with plastic wrap and continue to proof for another 12 hours in the refrigerator. After 12 hours, if the dough has risen well, with lots of bubbles and many roots as shown in the picture, it is ready.
Once the proofing is done, gently knead the dough to push all the bubbles out, then let the dough rest at room temperature for another hour.
Finally, shape the dough into a round ball, press it slightly flat with your hands, and spread 10g of butter evenly on top.

Baking the bread
Preheat the air fryer to 200 degrees Celsius for 5 – 10 minutes.
Place the dough on a sheet of parchment paper or a plate, press the dough evenly into a round shape, then use your fingers to press all over the surface of the dough.
Next, bake the bread at 160 degrees Celsius for 10 minutes, then flip it over and continue baking for another 10 minutes.
