Where to buy mint extract?

How to make Lollipop Candy

Mix egg whites with sugar
First, place a pot with about 300ml of water on the stove and cook over high heat. When the water boils, place a metal bowl containing 180ml of egg whites on top of the pot.
Then, pour 350gr of powdered sugar into the bowl of egg whites, using a flat whisk to stir well for about 5 minutes until the heat melts the sugar, the mixture warms up and blends together, then turn off the heat.

Whip the egg white mixture
Pour the egg white mixture into the mixing bowl of the mixer, turn on to medium speed, and whip the egg whites for about 5 – 7 minutes until the mixture doubles in volume. When lifting the whisk, it should form peaks that bend slightly.
Pause the mixer, add about 2 teaspoons of peppermint extract to the whipped egg mixture, then continue to mix on low speed for about another minute until well combined.

Mix the red egg whites
Take 1/2 of the whipped egg whites into a separate bowl, then add 1/3 teaspoon of pink food coloring, along with 1/2 teaspoon of red food coloring. Next, use a spatula to mix until the mixture is evenly colored.

Shape the candy
First, place the red egg whites and the white egg whites into a piping bag, then pipe the mixtures in the order of red – white – red – white onto a piece of plastic wrap that has been laid out.
Next, roll the plastic wrap up and cut one end to easily pipe the cream out, then place the plastic wrap containing the cream into another piping bag with a nozzle attached.
Place baking paper on the baking tray and pipe in a spiral shape; you can shape the candy large or small as you like! Finally, place a plastic stick in the middle of the candy mixture.

Baking the Candy
Place the baking tray in the oven and bake the candy at 100 degrees Celsius for 1 hour and 30 minutes, then take the tray out to let the candy cool. Once the candy has completely cooled and turned into a crispy, hard structure, you can remove the candy from the tray.
