Where to buy corn syrup?
- Corn syrup is an important ingredient for successfully making this candy, it is recommended that you do not substitute it with other types of syrup!
- This type of syrup is currently widely available, so you can find it in stores that sell baking or mixing ingredients, buy it at supermarkets, or check reputable e-commerce sites with prices ranging from 45,000 – 50,000 VND/700gr (1 bottle) (price updated as of November 2021).

How to make Marshmallow Candy

Cook the sugar syrup
Place a pot on the stove, add 75ml of water, 150gr of sugar, and 120gr of corn syrup into the pot, stir well and cook over medium heat for about 3 minutes until the sugar dissolves completely and the syrup mixture starts to boil gently.
Then pour the sugar syrup mixture into a bowl and let it cool down a bit.

Whip the cacao syrup and gelatin mixture
Gradually add to the bowl the cooled sugar syrup consisting of 20g melted gelatin, 1 teaspoon of vanilla extract, and 20g of cocoa powder.
Then, use a mixer to beat at medium speed until the mixture doubles in volume, creates light swirls, and turns light brown, which is the desired consistency.

Pour the candy into molds and set
Prepare a square or rectangular mold of your choice, then sprinkle a layer of cocoa powder on the bottom of the mold and pour the whipped candy mixture evenly into it.
Use a spatula to smooth the surface, then place it in the fridge refrigerator for 2 hours to let the candy set.
Tip: When pouring the candy, you should do it quickly as the candy sets very fast. -
Completion
After the candy has set, remove it from the mold and then use a sieve to evenly sprinkle cocoa powder on the surface.
Next, use a knife to cut the candy into small, bite-sized squares. Then, roll the candy again in cocoa powder until it is evenly coated, and you’re done!
Tip: To make it easier to cut the candy into pieces, you should warm the knife or dip it briefly in hot water first! -
